Pelatihan Pengolahan Jahe Menuju Kesiapan Usaha Mikro: Model Pemberdayaan Perempuan Perdesaan Berbasis Zakat

Abstract
Pelatihan pengolahan pangan bernilai tambah sering dipandang sebagai bukti pemberdayaan ekonomi perempuan, meskipun partisipasi teknis belum membentuk usaha yang layak. Artikel pengabdian ini menganalisis hasil awal kesiapan usaha program minuman jahe instan berbasis zakat bagi perempuan keluarga mustahik di Desa Melung, Kabupaten Banyumas. Kegiatan memadukan pendidikan masyarakat, demonstrasi, praktik langsung, konsultasi, dan evaluasi deskriptif melalui dokumentasi, observasi, wawancara pascapelatihan, serta penilaian produk. Peserta mengikuti proses dari pemilihan jahe dan ekstraksi sari hingga pemisahan pati, pemanasan dengan pandan, kristalisasi gula, dan pengemasan dasar. Serbuk yang dihasilkan berwarna kuning kecokelatan, beraroma dan bercita rasa khas jahe, bertekstur agak halus, serta memperoleh respons baik. Namun, produk belum memiliki prosedur operasional tertulis, uji konsistensi antarbets, bukti umur simpan, label lengkap, perizinan, perhitungan biaya, penetapan harga, uji pasar, catatan penjualan, dan pengukuran pendapatan. Program membentuk kemampuan teknis awal dan prototipe, tetapi memerlukan pendampingan untuk standardisasi, kepatuhan, validasi pasar, dan keberlanjutan usaha perempuan dalam jangka panjang.
